As many of you know, we have been gluten-free for almost five years now due to my husband’s health issues as in wheat products make him sick! At first, we felt limited on what we could make and had to forego many favorites. Fortunately, we seem to have come upon the gluten-free issue at the height of the game as there are now so many different ways to approach it, lots of products conveniently available and, many people figuring out how to eat normally on a gluten-free diet.
When I discovered BetterBatter flour mix, it changed the cooking/baking picture drastically. One bake sale at our parish, the cookies and cinnamon rolls I donated were all gluten-free and no one noticed. My major quest was finding a pie crust that ‘worked’!
Thus happened the ‘miracle’ dinner this evening – homemade turkey pot pies with near-perfect crust! If you didn’t know, you wouldn’t know!
